Here at basilico, we take pizza very seriously. This means not only doing intensive research into the finest ingredients and best producers, but also keeping up with Italy’s own food trends.

The last time we were in Italy on a (rather tasty) “Research trip”, we noticed that black dough was cropping up all over the place. It turns out that this dramatic-looking dough was created using vegetable charcoal and that not only does it look striking, but it also has a host of health benefits. So we decided to give it a go ourselves!

The benefits of drinking charcoal have been known since the nineteenth century. A French chemist called Michel Bertrand famously demonstrated its ability counteract poison by drinking it along with a large amount arsenic. The way this works is that charcoal – especially activated charcoal – is a highly porous substance. When ingested it absorbs any toxins in the body and carries them out through the digestive system, which can help relieve any number of problems, from bloating to heartburn.

It is made with carbonised coconut husks which are ground into a fine powder – it is totally safe for consumption and is odourless and tasteless, so you have all of the goodness and the visual impact, without any strange flavours.

Adding this very fine powder to our normal dough required a few test runs, but we eventually worked out the ratio and had created a product that was elastic enough to be stretched by hand without breaking and would form a crispy, thin crust.

Considering the health benefits of the charcoal, we wanted to pick light, tasty, health-conscious toppings to go along with it. We opted for the lighter buffalo mozzarella, sweet yellow peppers for a pop of colour, wild rocket to add peppery bitterness and our semi-dried sun-roasted tomatoes. To finish it all we added two of our most artisan salamis – our Tuscan wild boar salami and our punto di coltello.
